Our best-selling infused honey by far. Due to its immense popularity, we are establishing relationships with small organic farmers in Sri Lanka.
We are very much looking forward to visiting the farms and shaking the hands that help make this delicious honey possible. The infused honey we have found on the market has no nutritional value because heat is needed to properly infuse the honey. When honey is subjected to heat over 120 Fahrenheit, all of its health benefits are destroyed. This was the reason we were against making them for so long. However, we have figured out a way of making infused honey with all the health benefits honey is known for. Adding an abundance of raw honey to intensely infused honey that has cooled down and then allowing it to infuse brings the honey back to life with all the beautiful attributes that our products are known for.
When developing this honey, we decided on Ceylon cinnamon. So why Ceylon? Ceylon cinnamon is sometimes called "true" cinnamon and is grown primarily in Sri Lanka. Ceylon cinnamon is more expensive than its cousin cassia and more challenging to find. If you have a jar of ground cinnamon in your pantry, chances are it's cassia cinnamon, the most common (and least expensive) variety of cinnamon.
Ceylon Cinnamon vs. Cassia Cinnamon: How are they different? Ceylon has a sweeter, more delicate flavor than cassia, which may make it preferable in cinnamon desserts and lighter dishes. But the more important distinction is the difference in the amount of coumarin. Cassia cinnamon has much higher concentrations of the chemical than Ceylon. Ceylon cinnamon is the richest in phytonutrients of all cinnamon types and has the lowest levels of toxins. We consider Ceylon to be the healthiest type of cinnamon.
